What product or service does Yasha’s Breakfast Sandwiches offer?
Yasha’s Breakfast Sandwiches is an upscale, innovative, and luxury breakfast sandwich brand combining the creativity and flavors of fine-dining with the comfort of a breakfast sandwich. Yasha’s prides itself on creativity of our product offerings but also on the personalized and thoughtful hospitality that we provide even in an on-the-go restaurant setting.

How did you come up with the idea for this business?
I have spent the past 7 years working in restaurant kitchens in both front-of-house and back-of-house positions. I have always been attracted to the industry, and knew that I would one day like to begin a restaurant concept of my own. The breakfast sandwich idea stems from me making my brother and I new breakfast sandwiches daily while we were both at home during the summer. I saw this breakfast dish as a blank canvas for so many flavor combinations and pairings, and the idea of a sandwich-centric breakfast concept stuck with me. Since my freshman year of college, I have been working to expand this idea and grow its feasibility, culminating in the operation of a Yasha’s Breakfast Sandwiches food truck last summer.

Why did you decide to participate in the HI Hub Incubator program?
In general, I was excited by the idea of receiving consistent mentorship from many talented and respected individuals in the hospitality space. I have been scaling this company from just an idea my freshman year to a food truck this past summer. Participating in the HI Hub program seemed like a logical next step to continue my company’s growth.

What do you enjoy most about creating your own startup?
I think more than anything it’s the freedom to execute things in the way that you envision. Often when working for others, you may have ideas that excite you but are then stifled by red tape or management. In the startup environment, everything goes. If you want to run a lunch special as a test to see if it brings traffic, then you can, and if you want to create a special off-menu sandwich for a regular who wants to get something different from the usual, then you can do that as well. I consider myself a creative individual, and being in the startup space makes the most of this creativity.

What advice would you give to someone contemplating founding a startup?
I would say absolutely go for it but know yourself at the same time. I guess startups aren’t for everyone in a way. There's a lot that goes into in terms of idea generation, and doing everything for your business, at least while you’re getting started. If having your fingers in all parts of a company and having full creative control over everything sounds like fun, then it will be a challenging, yet fun and rewarding experience. If not, maybe entrepreneurship is not totally for you.

What is something you hope to learn through this process?
I hope to refine myself and Yasha’s Breakfast Sandwiches. In my mind, I know exactly what this company stands for the values it has, and the ways I want to make customers feel. But sometimes, I still have a hard time putting these things in words or into a pitch deck. I’m excited to improve this element of the business. Not only deliver quality experience for customers but also deliver a coherent and innovative approach to my business when speaking to investors or others in the business world.

What does the future of your startup look like in an ideal world?
The future of Yasha’s Breakfast Sandwiches looks like having 7-8 locations along the East coast and in Denver (my home city). The business is still small enough to deliver on the incredible quality and hospitality I desire but also reaches the audience I believe Yasha’s has the potential to.

Have you worked with any alumni or mentors on this project? If so, who and what was that experience like?
Yes, I have worked with Professor Ronald Naples at NYU SPS for a little over a year now. Honestly, it has been one of the most rewarding experiences I’ve had thus far as a student at NYU. He’s helped me grow in so many ways as an entrepreneur and was the first person to unlock the potential within me and Yasha’s Breakfast Sandwiches as a concept. Professor Naples has been an incredible mentor in my life.
